BAKED VEGETABLES WITH TEMPEH
Tempeh recommendation: Soybean tempeh with oriental spices
Crispy roasted oven vegetables meet spicy baked tempeh - a delight that is easy to prepare and incredibly tasty! Sweet potatoes, carrots, peppers and onions develop their full flavor thanks to the roasted aromas, while the tempeh provides a hearty note. A hint of coriander makes the dish perfect!

Ingredients
- 200 g tempeh (oriental or with sesame & garlic)
- 2 sweet potatoes, sliced
- 2 carrots, sliced
- 1 bell bell pepper, in strips
- 2 red onions, sliced
- 1 tbsp olive oil
- 1 tsp paprika powder
- 1 tsp cumin
- Fresh coriander (optional)
- salt and pepper
Preparation
- Prepare the oven vegetables: Mix the sweet potato, carrots, peppers and onion with olive oil, paprika powder, cumin, salt and pepper. Place everything on a baking tray and roast in the oven at 200°C for approx. 30 minutes until the vegetables are soft.
- Bake the tempeh in the oven: Cut the tempeh into cubes and bake in the oven together with the oven vegetables. Please use neutral oil.
- Serve: Arrange the oven vegetables on plates and place the fried tempeh strips on top as a topping. Garnish with fresh coriander.
